Legacy is a privately-owned company which manages hotels and guest houses in the UK, Spain and Scandinavia.
Bosses have launched a recruitment drive and say they will reopen the gym, which had 1,400 members, by the end of this month. The venue also has a swimming pool.
Legacy chief executive Andrew Townsend said: “We are delighted to take on the management of the former Hilton Hotel on behalf of the new Sheffield-based owning company.

The hotel opened in 1997 and the management agreement between Park Victoria Quays and Hilton dated from 2017.
It had about 100 permanent staff.
The Star revealed last year how previous operator, Park Victoria Quays, recorded a £2m loss for 2018.
Victoria Quays is set for a renaissance with a £5.8 million scheme to better connect it to the city centre set for completion in March 2020.
